One day last month, my family was invited to a friend's house for dinner and they asked us to bring a vegetable. Now being the lazy cook that I am, I didn't bother to go to the grocery store, but instead looked around in my fridge and pantry and decided to try something different. This was perhaps one of the easiest things I had ever made and the results were amazing!
Ingredients on Hand:
1 bag of baby spinach
1/2 tin of cashews
1 box of pre-cooked bacon
1/2 sweet onion
1 bag of frozen strawberries
Thaw the strawberries in warm water. Put the bag of spinach in a bowl. Cut the onion and bacon and put in the bowl as well. Make sure the strawberries are thawed and then put in the bowl as well. Dump the cashews into the bowl and then mix well.
This is best served with a Balsamic Vinaigrette dressing but feel free to use whatever you have on hand.

The beginning...
So having found that I can usually whip up a meal with the ingredients that I have on hand in my kitchen, I wondered if it would be helpful to others out there who think they have nothing to eat in their house. I used to shy away from cooking and then realized that you don't have to follow the recipe ever if you don't want to and that has made for some interesting meals. My family will tell you that I make a mean meal (or rather they tell me that) but I wonder just how truthful they are being at times. Anyway here it is... I am going to try to share some of my favorites and hope that others out there are open to sharing theirs as well.
If you would like help too, feel free to send me what ingredients you have and I will try to come up with something for you to cook. That doesn't mean send me the craziest ingredients that you can think of just to mess with me though. If you sent me, hot sauce, kiwis and salt, I am fairly sure that I wouldn't be able to help. And I will most likely assume that you have butter, olive oil, salt and pepper as well as some other basics most people keep on hand in their kitchen.
The other thing I should probably mention is that I am a fairly lazy cook. If it is time-consuming, it is unlikely that I will make the effort. Add in to the mix, that I have a 4-month old little girl and you begin to realize that even if I wasn't already lazy, I wouldn't have the time to do it anyway.
